Welcome and thanks for visiting Carolinahoney.com, where we sell Raw Local Honey produced only in the Carolinas.
I am a full-time commercial North Carolina beekeeper and my honey bees produce the wonderful natural aromatic and flavorful SOURWOOD HONEY and WILDFLOWER HONEY that we pack and sell. We have two types of Wildflower Honey, Spring Wildflower and Fall Wildflower, there is a big difference! Spring Honey is our honey produced during spring and early summer.Spring honey also has the flavor of the honey produced this past spring. It is also important to note that it contains the pollen that was produced and brought into the hive during the spring. Fall Honey is honey produced from nectar that the honey bees collected from August until the first hard freeze, they have honey with pollen that was collected during the fall months.
Why is that important? Research has shown that folks with allergies that each honey that contains pollen that they are allergic to often are able to gain various levels of immunity to the air borne pollens. Each type of Wildflower Honey that we carry has the pollen and flavor from all the varieties of flowering plants that produced nectar in sufficient enough quantities for the honey bees to produce honey. Our 2008 Spring Wildflower Honey consists of many varieties of honey including, apple honey, peach honey, strawberry honey, black locust honey, tulip popular honey, black gum honey, blackberry honey, persimmon honey, clover honey, and wild cherry honey. The photo above was taken in southeastern Guilford County North Carolina of two ladies picking strawberries not too far away from my gentle hives placed on strawberry pollination. We are also producers of some of the finest sourwood honey in the world!
With hives in over 10 North Carolina counties from the Blue Ridge mountains to the eastern Piedmont we provide our customers through selected Health Food and Grocery Stores, Specialty and Gift Shops, Mail Order, NC Fall Festivals, and the World Wide Web with quality Wildflower Honey and Sourwood Honey that is never heated nor filtered. We call it Carolina Honey.
We use only stainless steel and food grade plastics in our de-capping, extracting, clarifying, straining, and storage processes. We have a dedicated sanitary facility for packing and processing our honey. Our Carolina Honey is bottled to order which brings you the freshest quality, flavor and aroma possible. I am an engineer and have worked for such high tech companies as Hughes Aircraft and Ford Aerospace; there I learned the values of quality control and responsibility to the customer. These same concepts of quality are built into all our operations from hive assembly and management to bottling and packaging our quality products. We truly strive to produce the finest honey possible for our customers.
Our gentle method of processing HONEY is preferred by honey purists and is often called RAW HONEY. It is the best honey that you can buy! Most honey found in supermarkets and even health food stores contains honey of foreign origin, can be up to four or five years old, and is heated to temperatures above 140 degrees and is micro-filtered through high-density high-pressure filters which destroys 99.9% of natural enzymes and vitamins, and also removes pollen, flavor and aroma. Raw Honey is never heated, never filtered. Because it is never heated or filtered it retains all the wondeful taste , flavor, and aroma that mother nature and our honey bees produced. There really is a difference!
Our Sourwood Honey is from the foothills and the Blue Ridge Mountains of North Carolina. We put on our Sourwood Honey supers just as the sourwood trees start flowering. We take off our Sourwood Honey supers just at the end of the bloom. This assures a quality product and a very high concentration of Sourwood Honey. Both our Wildflower Honey and our Sourwood honey is processed in the same manner with the same amount of attention and care. It takes 9 months to prepare our honey bees to have enough numbers to make enough honey to last them the winter and the extra honey for us to bring to your table. It takes a lot of work and attention to detail to produce an exceptional product, our honey truly is gourmet honey.

All products are shipped via USPS Priority Mail. Shipping & Handling is based on net weight, the weight of the honey that you purchase, not the total weight of the shipment (plastic containers only). The cost is $6.45 for the first pound (16 ounces), over 16 ounces please add $2.25 for each additional pound to 4 pounds. For product weight over 4 pounds please add $1.95 per pound up to and including 9 pounds and $1.75 per pound thereafter.
